Ingredients for making Passion fruit pie with biscuits:

For the passion fruit pie biscuit base:

 150 grams of your favorite biscuit

 3 tablespoons of melted butter or margarine

For the passion fruit pie cream:

 1 box of condensed milk

 1 box of sour cream

 1 envelope of colorless gelatin (approximately 12 grams)

 240 milliliters of concentrated passion fruit juice

For the passion fruit pie jelly:

 2 fresh passion fruit

 3 tablespoons of sugar

 80 milliliters of water (⅓ cup)

How to make Passion fruit pie with biscuits:

Prepare the passion fruit pie biscuit base by crushing the biscuits in a food processor. Then add the butter in the food processor along with the biscuit and beat until it becomes crumbly. If you prefer, you can mix the biscuit and butter in a bowl.

Place this biscuit and butter mixture into a lightly greased pan with a removable bottom approximately 20 cm in diameter. Press with your fingers to make the mixture very compact on the bottom and sides, as in the photo, and bake in the oven at 180ÂșC for 10-15 minutes.

Tip: If you prefer, instead of baking the biscuit base in the oven, you can simply reserve it in the fridge. The difference is that, without taking it in the oven, it will break when serving the pie.

While preparing the passion fruit mousse that will be used as a filling for this passion fruit pie. Start by moisturizing the gelatin according to the directions on the package.

Then place the hydrated gelatin in a blender and add the remaining ingredients: condensed milk, cream and concentrated juice. Beat until well blended (2-3 minutes beating). Place the previous cream in the mold and set aside in the refrigerator for 2 hours or until firm.

Finally, to decorate the passion fruit pie, prepare a very simple passion fruit jelly: place the passion fruit pulp, sugar and water in a pan and heat. Simmer for 10 minutes or until caramel consistency. Turn off and let cool.

Tip: Do not let the jelly boil for a long time, as its consistency becomes thicker after cooling.
